If you can wait out a table at April Bloomfield's signature gastro pub The Spotted Pig in the West Village, there are two things you MUST order. Make sure to start off with the chopped chicken liver. It may not be for everyone, but if you like chopped liver, this is a 10. The salty, sweet chicken is served on a toasted baguette smeared with olive oil and salt. I could eat this every day. It's indulgent but somewhat healthy, right? There's tons of protein in liver... Eat on.

The second item that is a must is Bloomfield's piece de resistance; the burger. Now I must warn you, the burger only comes one way, which is topped with roquefort cheese and served with spicy mustard and ketchup. That's right, no cheddar or onions here. I promise it's good. The hamburger is a blend of meat and apparently encrusted with salt. The meat is juicy and fresh. If blue cheese isn't your thing, the shoe string rosemary fries will cheer you up. 

Go and expect a wait. It's worth it.
