Blue Cheese Cauliflower Puree

Perfect for a cozy night in, blue cheese cauliflower puree is a decadent but relatively healthy dish that can serve as a great side dish to steak .

Blue Cheese Cauliflower Puree
Serves two


1 head of cauliflower, cut in florets
1 cup chicken broth
2 tablespoons butter
1/4 cup smoked blue cheese, crumbled
1 tablespoon thyme
salt
pepper

In a large pot, add chicken stock bring to a boil. Then add cauliflower and cover, lower heat, and let cauliflower steam for about 20-25 minutes. Once cauliflower is soft, use tongs to transfer into a food processor. Add the remaining chicken stock and butter and puree with a few pulses. Then add blue cheese and thyme. Puree until desired  consistency. Enjoy.
