This week we cooked one of my favorite weeknight meals; turkey taco salad. It's healthy, easy to compose, and who doesn't love guacamole, cheese, sour cream, and salsa? With all of the fixings left over, I decided to create a Mexican-inspired egg breakfast, which honestly turned out better than I expected. Here it is:
Mexican Style Eggs
2 slices of toast
2 tablespoons cream cheese
2 dollops guacamole
Heat a skillet over medium heat, add oil. Once hot, add the spinach and sautee on one side of the skillet. While the spinach is cooking, add your eggs and fry over easy. Sprinkle with pimenton. When eggs are done to your likeness, spread cream cheese on toast, add spinach, fried egg, and top with avocado and salsa. Finish with salt and pepper.
