I hope everyone had a nice and long Easter weekend filled with family fun and delicious food. I basically ate my way through the weekend and tried to avoid gaining 10 pounds by doing a lot of walking outside and enjoying the beautiful weather.
I won't go into all the meals I consumed over the course of three days, but I had a few highlights, including Easter dinner with a Honey Baked Ham, pineapple souffle, a variety of potatoes, and asparagus, and a particularly nice Easter brunch prepared by my parents with scrambled, cheesy eggs, baked bacon, kielbasa, toasted rye bread, and crispy potatoes. And this was just two meals out of many. I feel even fuller just writing about this, and cannot wait to say "hello" to my green juice tomorrow morning!
Moreover, I'm so thankful the weather is finally turning because the sunshine is the perfect lure to getting outdoors and burning off comforting meals.
